We reinterpret our tradition

The NeroModena project was born from the meeting between Alessandro Calveri, a producer with 30 years of experience in the world of Balsamic, and Marina Spaggiari, an expert in Traditional Balsamic Vinegar of Modena and guardian of the family's ancient production secrets. Together they set up a new business in 2005 that manages to combine ancient tradition and modern technology, focusing on industrial-level production facilities for quality and safety, while still respecting the artisanal method. The goal is to produce a superior Balsamic Vinegar destined for haute cuisine and connoisseurs, enhancing a tradition with ancient roots to create a versatile product that adapts to the needs of cuisines all over the world. The company is located in the Modenese countryside, the elected place for the production of Balsamic Vinegar of Modena IGP and DOP according to the production regulations. All stages of the production cycle take place here, from the cultivation of raw materials to bottling.

Listen. The wind runs through the rows of our vineyards here in the Emilian countryside. The clusters will be hand-picked and pressed to make must that will cook slowly over direct heat and be left to ferment. Smell the barrels, each wood has its own. The vinegar is maturing and the passing time brings with it new aromas, inimitable nuances that make it precious. Get intoxicated by its intense, enveloping smell. Balsamic has aged for long years and has become a thick liquid. To the touch, its texture is full-bodied, each drop of it a round, shiny little world.
