Penne salad

Cook some penne rigate in boiling salted water and drain while still very firm to the bite. While the pasta cools, prepare a mixture of sliced artichoke hearts, mushrooms and olives, diced cooked ham, diced Pachino cherry tomatoes and chopped parsley. Next whisk together an emulsion of balsamic vinegar, extra virgin olive oil, salt and, if you like, a little pepper. Use this emulsion to dress the pasta, garnish with the chopped parsley or fresh mint.
